Anatomy of the Perfect Sufganiyah

Of course when I posted Anatomy of the Perfect Latke you knew I had to give equal time to sufganiyot, the jelly donuts traditionally eaten at Chanukah in Israel and in sephardic communities. I am more of a latke gal myself, but I think that is because I rarely have a sufganiyah I like. This year, I think I am going to try to make them myself. Girl Versus Dough has a great sufganiyot tutorial on Tablespoon which makes it look doable.
